So excited to share a super yummy and healthy snack the whole family will enjoy. If you are like me the only time you heard of figs growing up was probably in the popular {highly} processed snacks Fig Newtons. Raw figs are actually incredibly nutritious and are the perfect healthy snack for kids! Figs are known to be high in magnesium, iron, potassium, and calcium and also rich in vitamins A & K. They are sweet like candy and can be eaten by themselves. I decided to put these in cookie form to make them more enticing to my two toddlers, and it worked! You can double or triple this recipe depending how many you want to make. These are the perfect snack for meal prepping and to throw in those lunch boxes during the week, or when your kids come home hungry from school. Either way I hope you give them a try!

3 Ingredient Fig Chia Cookies

Ingredients:

  • 1 cup dried figs 
  • 1 tbsp chia seeds
  • 1/4 tsp ground cinnamon
  • sprinkle of pink salt *optional
  • 1/4 tsp vanilla extract *optional

Directions:

  1. Combine all ingredients into food processor and pulse until it forms a sticky paste, making easy to roll into balls. *Cut the very top stems off the figs first. 
  2. Using a small cookie scoop, roll into balls and then press a little bit to make flat into cookie shape. 
  3. Store in fridge immediately for 7 days.
