Hey y’all here is a kid-friendly recipe for you that is sure to be a hit with your wee ones! Do anyone else’s kids’ constantly ask for snacks? Mine certainly do, all day long it seems like! With that being said, it is mandatory I have quick access to some healthier snack options. Each week I try to prepare 2-3 snacks aside from the typical fruits and vegetables they also munch on. When I make snacks I always look for recipes free of refined sugars, on the healthier side, and minimal ingredients. Some of our typical go to’s are energy balls consisting of dates, rolled oats, pumpkin seeds, flax seeds – those sort of ingredients, whole wheat muffins with fruit and sometimes shredded vegetables such as zucchini and carrots, or some fun little bar type items like these Honey O bars. These are cleaned up a bit by avoiding using the popular brand Cheerio’s, which contain several GMO’s and preservatives and going for a cleaner option such as Love Grown Power O’s. Love Grown Original Power O’s are made from lentils, navy beans, and garbanzo beans which provides double the amount of protein than Cheerios and like I said earlier free of GMO’s and anything artificial. Another clean option I would recommend is Cascadian Farms Organic Purely O’s. Other nutritional benefits include avoiding refined sugars by sweetening with honey and also adding an extra boost of protein from the peanut butter. Combine peanut butter & honey in a large pot or saucepan over medium heat. Heat until mixture just tarts to simmer, about 2-3 minutes,stirring. Remove from heat and stir until mixture is well combined.
Stir in cereal until evenly coated. Pour mixture into prepared pan, cover with parchment and press firmly. (Using a pastry roller will help to firmly and evenly pack down the mixture so the bars hold their shape).Chill in the refrigerator for 1 hour. Cut into bars and store in refrigerator for the week.
