These tacos are the epic combination of tasty and healthy. Packed with fiber, protein, and healthy fats these tacos(or wraps) are in rotation in our house just about every week. Added bonus they are SO easy to throw together. I pack my husband’s lunch every day and he always looks forward to these. Sometimes I add BBQ instead of ranch because he is the ultimate BBQ guy but they are good either way. Using shredded chicken(from my whole chicken), and pre-cooked quinoa(which I usually do on meal prep Sunday’s) make it easy to throw together in less than 10 minutes and head out the door. These can also be made the night before and eaten cold or warm. Tips on how to make it kid-friendly below! Enjoy.
Chicken Quinoa Ranch Tacos
Makes 2 tacos/wraps
2 Organic whole wheat tortillas (I am using La Tortilla Factory in this recipe but Ezekiel Sprouted Grain tortillas are great option or the best you can do!)
To assemble taco’s, lay tortilla on flat surface and spread ranch dressing on as bottom layer. About 2-3 tsp tsp on each tortilla.
Layer spinach, 2 tbsp quinoa, chicken, black beans. Sprinkle with chili powder, cumin, & pink salt (this gives it a Mexican taste which I prefer and love).
Top with avocado, dollop of fresh salsa, & sour cream if you choose. Eat cold or warm. Enjoy!
Tips for making kid friendly:
Using a divided plate(I always have much better success with these because they are more visually appealing), place quinoa and black beans in one section, avocado in another, and lastly roll up tortillas with chicken inside- sometimes I add cheddar cheese. Or omit tortillas and use shredded chicken by itself.
