I don’t know about you guys but I love a good stir-fry, and the fact this dish takes just minutes to cook is an added bonus! It is a regular in our house and a go-to on busy weeknights (and weekends). I recently had a request from a mama follower asking for quick and easy recipes for busy weeknights, so I decided to blog this one for her and the rest of you guys! By making my home-made teriyaki sauce you avoid any extra additives and preservatives commonly found in pre-made sauces. And it tastes way better, in my opinion of course, hehe. It is nothing short of flavor and packs lots of nutrients, and as always kid-friendly. Skip the takeout places loaded with artificial ingredients and the high price tag and opt for this healthy, organic based version!

Easy Chicken Teriyaki Stir Fry

Ingredients:

  • 1 bag Cascadian Farms Organic Chinese Style Stir Fry Blend (like this)
  • 1lb organic skinless chicken tenders
  • 1 cup uncooked brown rice(I make mine in my InstantPot-linked below, or make ahead to save time)*I double this amount for my crew.
  • 1 tbsp olive oil

Sauce Ingredients:

  • 3 tbsp reduced-sodium soy sauce(I use Bragg’s Liquid Aminos)
  • 2 tbsp rice wine vinegar
  • 2 tbsp raw honey
  • 1 garlic clove, minced
  • 1 tsp sesame oil
  • 1/4 – 1/2 tsp ground ginger(I prefer 1/4 but add more to suit your taste preferences)

Directions:

  1. Mix sauce ingredients together in small bowl, set aside.
  2. Cook rice according to directions. (If using InstantPot it will take 20 minutes total.)
  3. Heat Olive oil in medium size skillet. Cut chicken into bite size pieces and sprinkle with salt & pepper to taste. When skillet is heated toss chicken in.
  4. Cook until almost cooked through, about 5-7 minutes. Add in entire bag of frozen blend into skillet with chicken.
  5. Cook for additional 4-5 minutes until vegetables are tender.(Add in more olive oil if needed to prevent from sticking)
  6. Add in all of the sauce, cook for another 4 minutes, roughly, until most liquid is absorbed.
  7. Remove from heat, sprinkle with sesame seeds(optional) and serve over rice!
*Organic ingredients are recommended when obtainable.
