Each year we pretty much vacation in the same spot. It has sort of become our family tradition since our first born so it’s usually a no-brainer as to where we will go on vacation when that time comes around. One of the reasons we love this particular area is for the abundant selection of fresh, non-chain, healthy dining options. We don’t dine out for every meal but when we do this place is our number one pick! We discovered this gem of a restaurant accidentally while passing through the area on our bikes. It looked appealing so we hopped off and went inside. Little did we know we had just found our new favorite eating spot!
In case you are still reading and wondering where in the world I am talking about, this is Freshii in Rosemary Beach, Florida/30A area! Freshii has a delicious selection of fresh juices and smoothies, healthy breakfast, lunch, and dinner options. My husband and I love Freshii so much we always randomly discuss opening our own franchise here in our hometown in Middle Tennessee. So if anyone is out there that is reading this and wants to act on our idea please do so!!! I can promise you we would be loyal customers. But for now, I am going to show you my copycat recipe on my favorite burrito bowl. This would also make a great dish for meal prepping. So to the good part…..
 

Freshii Inspired Burrito Bowl


For the bowl

  • 1 cup uncooked rice(*I double this for my crew)
  • 1 batch falafels- Recipe below
  • corn- (* I am using roasted corn on the cob done in oven but organic canned corn will work as well)
  • pico- (*I am using pre-made pico from my grocery store deli, remember to make sure there are no preservatives, only fresh ingredients)
  • shredded beets (using Love Beets sweet & smoky shredded beets)
  • 1-2 slices of avocado per bowl

Falafel (One batch makes approximately 12)

  • 2 15.oz canned chickpeas
  • 1 tbsp minced garlic
  • 2 tbsp each lemon juice and olive oil (or avocado oil)
  • 2 tbsp each ground parsley, ground cilantro, cumin, coriander, onion powder spice.
  • 1 1/2 tsp pink salt
  • 2 tsp powder
  • 1/4 cup whole wheat flour

For the Sauce:

  • 1 cup sour cream (or greek yogurt)
  • 1 tbsp sriracha sauce (good quality without preservatives recommended- mine is linked below!)
  • 1 garlic clove,minced
  • 1 tbsp lime juice
  • 1/4 tsp pink salt

Directions:

  1. Cook rice according to package.(* I cook mine in my InstantPot in just 15 minutes total)
  2. To make the sriracha cream sauce, whisk together sour cream or yogurt, sriracha, minced garlic, lime juice, and salt. Set aside.
  3. To make falafels : Mix all ingredients in food processor and pulse until evenly combined, about 30 seconds. Line baking sheet with parchment paper and bake in oven on 375 for 40 minutes, turning halfway through to crips evenly.
  4. To assemble bowls, divide rice mixture into serving bowls, top with corn, pico, corn , beets, avocado, and falafel.
  5. Drizzle with cream sauce and enjoy.

*I always recommend organic ingredients when do-able!

Freshii Oaxaca Bowl


This is one of my favorite bowls at Freshii. I have had several different ones but I always seem to go back to this one. It consists of brown rice & kale, avocado, beet slaw, black beans, corn, salsa fresca, crispy wontons, lime wedge, and spicy yogurt sauce. The Tex Mex burrito is a very similar choice if you are in the mood for burritos. My husbands’ favorite picks are the Teriyaki Twist bowl and the Khao San burrito. The teriyaki bowl consists of brown rice, edamame, crispy wontons, broccoli, carrots, cucumber, green onions, sesame seeds, teriyaki sauce, and he adds on steak for his protein choice. The Khao San burrito is made up of brown rice, spinach, almonds, edamame, mushrooms, carrots, cabbage, spicy peanut & lemongrass sauce. All of their proteins are hormone free and they have a selection of chicken, steak, tofu, and falafel.

Frozen Yogurt with strawberries & almonds

Every single time I just can’t resist their frozen yogurt bowls. It is hands down the best frozen yogurt I have ever had and totally hits the spot after a delicious meal. I typically split half with my toddler. You can choose a variety of toppings including almonds, chocolate chips, coconut, dried cranberries, green apple. honey, mango, strawberries, or walnuts. My favorite two combos usually consist of a type of fruit and nut. I crave this for weeks after vacation. SO good!!!
