I’ve got a brand new smoothie coming at ya just in time for Valentine’s day! It’s packed with tons of nutritious goodies and my family has been loving it the past few weeks! If you think you don’t like beets just hear me out on this one. My husband has tried beets just about every way and still just doesn’t like them and will not go anywhere near them. London(18M) actually loves beets and will eat them straight up and my toddler is very choosy with them. So this mama came up with a way to get this immune-boosting vegetable into their weekly routine without them ever knowing. Honey if you’re reading this, yes that’s right, that smoothie you said you “loved” this morning actually beets in it. HA gotcha!
Not only are beets full of vitamin C(excellent immune booster),fiber, and magnesium they also contain high amounts of vitamin B folate which is essential to pregnancy and aids in development of infants spinal cord. Another great reason to consume beets during pregnancy is for their anti-inflammatory properties. I never swelled much with either pregnancy but I did have some pretty brutal leg cramps and beets are known to help prevent joint pain and swelling! So there’s some fun facts on beets and just a few reasons to consider adding them into your family’s diets. This is such a pretty smoothie you’re kids(or husbands) will never know how nutrient-packed it is!
Strawberry Beet Smoothie
Serves 2
Ingredients:
1 cup unsweetened vanilla almond milk (or milk of choice)
1 cup frozen strawberries
1/2 cup frozen raspberries
1/4 cup kefir
1 large banana
1/2 large beet, cooked (or 1 small size beet)
1 tbsp hemp seeds
1 tbsp bee pollen *optional-great immune booster & aids in digestion
1/4 cup frozen cauliflower *trust me on this, can’t even taste it
1 tbsp raw honey
Organic ingredients recommended when obtainable
Directions
Place all ingredients in high power blender starting with liquids first, then frozen items, ect. and blend for 30 seconds or until smooth.
