I am excited to share another delicious and healthy snack with you guys. These blueberry bars are seriously my newest obsession and after testing them twice they are perfect. I named them Superman bars because for one, I am personally not a fan of the word superfood (I believe all real, whole foods are superfoods), and secondly, these really remind me of being big and strong like Superman. So there ya have it, introducing  Super Man Blueberry Granola Bars. When I say they are packed with nutrients I seriously mean it. Just check out all the ingredients below and you’ll see benefits such as protein, fiber, omega-3 fatty acids, healthy fats, and essential minerals such as calcium and iron etc. These homemade granola bars are purely and naturally energizing, good for you snacks! So now that I’ve hopefully convinced you to try these out for yourself, let me note that this recipe calls for blueberry extract. That may be something you do not have on hand and I certainly don’t want you to special order it just for this recipe. But I will be honest and say that it really makes the bar! I use it in blueberry muffins, donuts, and crumble bars so it gets many uses in my house but I know everyone is different! I will link a couple of choices below in case you decide to go for it but you can simply sub for vanilla extract as well.

These bars are extremely kid friendly and hubby approved too. They make the perfect quick grab and go snack for the park, pool, off to work, or gym. You simply can not go wrong with them. Enjoy!

 

Super Man Blueberry Granola Bars

Ingredients:

  • 1 cup rolled oats
  • 1 cup pitted dates
  • 1/4 cup ground flax meal
  • 1/3 cup raw almonds, finely chopped.
  • 2 tbsp organic unsweetened shredded coconut flakes
  • 1 tbsp hemp hearts(seeds)
  • 1 tbsp chia seeds
  • 3 oz dried blueberries *Be sure to check ingredient label, some have corn syrup & highly processed oils which you want to avoid!
  • pinch of pink salt
  • 6 tbsp almond butter, runny.
  • 1 tbsp coconut oil, melted.
  • 1 tbsp raw honey
  • 1/4 tsp blueberry extract, I am using Olive Nation extract specifically. Can sub for vanilla extract. See notes above.

Directions:

Place dates in a food processor and pulse until all are completely chopped and can form a sticky ball.

Melt almond butter & coconut oil in small sauce pan on stove or microwave for 15 seconds. Add honey. Set aside.

Combine oats, flax, almonds, coconut flakes, hemp and chia seeds, salt, blueberries in large mixing bowl.

Mix all ingredients together + extract in one large bowl. *You can use your Kitchen Aid mixer to combine quickly or just use your hands. 

When it is mixed evenly, press down firm and evenly onto small baking sheet lined with parchment paper. Could use 8×8” size dish.

Place in fridge for at least 4 hours to firm up and hold together, for best results leave overnight. When completely firm slice into bars. Store in fridge for a week.
